A legacy in farming

Three generations,
one obsession.

Hacienda La Victoria is a 400-hectare estate in Guayas, Ecuador — cultivated and crafted across three generations. The land, altitude, and the proximity to the cordillera create a microclimate that shapes the character of every bean we grow.

Our cacao is the exclusive CCN-51 variety, with roots in the vision of agronomist Homero Castro and our grandfather, Manuel I. Encalada Z., whose hacienda 'Pechichal' helped give the variety its name. Decades of careful selection have refined its yield, quality, and consistency.

Cocoalate is the final chapter of that story — a true farm-to-bar chocolate made entirely within our own grounds.

Nothing leaves the estate until it's chocolate. Every stage is controlled, monitored, and tuned by hand.

Harvest

CCN-51 pods hand-picked from our own plantations at peak ripeness.

Ferment

Extended fermentation past 90% — tuned over many trials for aroma depth.

Dry & roast

Mechanized drying to 6.8% humidity, then a roast profile chosen for nutty character.

Conch & temper

Refined, conched, and tempered on-site into a smooth, snapping bar.
